Apple polyphenols is the general term for apples that have a benzene ring and bind to a number of hydroxyl chemical structures.The polyphenols in apple mainly include flavane-3-ols, flavonols, hydroxybenzoic acids, dihydrochalcone and anthocyanins.Apple polyphenol is a light yellow-brown powder with a slightly bitter taste and soluble in water and ethanol.The composition and content of polyphenols in apples are often different due to variety, maturity, planting conditions, storage conditions and time, and different parts of tissues.Immature apples and mature apples, although their composition is similar, but the content of ingredients are very different.The polyphenols in mature apples are mainly chlorogenic acid, catechin and proanthocyanidin, while in immature apples, dihydrochalcone, quercetin and other compounds are mostly used.
